In collaboration with Azabu10 and its chef Andrea Arcieri, we will celebrate Japan with one of its most famous traditions: the Kaitai.

The Japanese ritual of cutting up a whole tuna, performed in front of the audience.
It is not just a culinary demonstration: it brings to light the process that takes the fish from the counter to the plate, highlighting precision, control, and, above all, zero waste.
